NAME

     CHEESECAKE-3 - Restaurant-style cheesecake

INGREDIENTS (one cheesecake)

          CRUST
     100 g     flour
     50 g      sugar
     5 ml      lemon rind
     1.5 ml    vanilla
     1         egg yolk
     50 g      softened butter
          CAKE FILLING
     1 kg      cream cheese
     300 g     sugar
     20 g      flour
     7 ml      orange rind
     7 ml      lemon rind
     1.5 ml    vanilla
     5         eggs
     2         egg yolks
     50 ml     cream

PROCEDURE

          (1)  Mix crust ingredients; press into  a  baking  pan.
               Bake 10 minutes at 200 deg. C.
          (2)  Combine filling ingredients; mix  well,  and  pour
               into baked crust.
          (3)  Bake at 225 deg. C for 10-12 minutes.
          (4)  Reduce to 100 deg. C for 1 hour.

RATING

     Difficulty: easy to moderate.  Time: 30 minutes preparation,
     1 hour baking.  Precision: measure the ingredients.
