CUCUMBER-SAUCE - A mideast-style sauce with cucumbers and yogurt This recipe came originally from the local paper, years ago. They liked it with lamb.
350 g cucumber (coarsely grated) 4 ml whole cumin seeds 10 ml hot green chilis (seeded & chopped) (optional) 250 ml plain yogurt 5 ml vegetable oil 2.5 ml garlic (finely chopped) salt (to taste) (optional)
(1) Toast cumin seeds in small heavy skillet until browned. Do not burn. When they start to crackle, remove from heat, shaking skillet. (2) Combine all ingredients. Blend well and chill.
Difficulty: easy. Time: 5 minutes preparation, 1 hour chil- ling. Precision: approximate measurement OK.
