Recipe for "sardine-fry"


NAME

     SARDINE-FRY - Sardines with garlic and tomato
     A quick and easy meal for two people. This is a recipe  con-
     jured up by my friend Carole Senior.

INGREDIENTS (serves 2)

     2         cans of sardines
     1         small onion chopped
     1/2          green pepper, chopped
     200 g     tomatoes (1 small can)
     1/2          garlic clove, crushed
     pinch     salt and pepper
     30 ml     cooking oil
     200 g     uncooked white rice
     500 ml    water

PROCEDURE

          (1)  Heat the oil in a small frying pan.
          (2)  At the same time place the water, rice and a pinch
               of  salt  into  a small saucepan and simmer for 15
               minutes.
          (3)  Place the chopped onion and pepper in  the  frying
               pan and cook until the onion becomes soft.
          (4)  Add  the  tomatoes,  garlic,  sardines,  salt  and
               pepper  to the frying pan and cook until for 10 to
               15 minutes, stirring occasionally.
          (5)  Serve over the rice.

RATING

     Difficulty: easy.  Time: 5 minutes preparation,  15  minutes
     cooking.  Precision: measure the rice.
