SHORTBREAD-2 - Soft shortbread My mother makes this; she got the recipe from a friend.
250 g soft butter 100 g flour 60 g corn starch 60 g icing sugar 5 ml vanilla
(1) Preheat oven to 160 deg. C. (2) Beat butter and vanilla until foamy. (3) Add dry ingredients and blend. Do not overstir. (4) Spoon onto an ungreased pan. (5) Bake at 160 deg. C until done (10 - 20 minutes depending on thickness)
Difficulty: easy. Time: 5 minutes preparation, 20 minutes cooking and cooling. Precision: approximate measurement OK.
