WIGILIA-4 - Pickled Herring in Sour Cream This recipe could be used as part of a 12 course meal known in Polish as Wigilia, or on its own. Wigilia is eaten after sundown on Christmas Eve.
6 pickled herring, drained 1 large onion, peeled and chopped 1 clove garlic, crushed 6 hard-cooked eggs, peeled and chopped 1 apple, cored and chopped 5 ml lemon juice 250 ml sour cream 1 ml salt 1 ml pepper 30 ml fresh dill or parsley, chopped
(1) Cut herring into small cubes. Mix herring with onion, eggs, apple, and lemon juice. (2) Combine sour cream, garlic, salt and pepper; add to herring mixture and mix well. Sprinkle with dill or parsley. (3) Serve with rye bread.
Difficulty: easy. Time: 30 minutes. Precision: approximate measurement OK.
